Beyond the incredible flavor, this stir fry showcases the versatility of mashing up different types of cooking profiles. I was looking to make a dinner using rice noodles we had purchased. My wife loves Pad Thai so I was leaning towards that. However, I entered a recipe creation contest for the Desert Pepper Trading Company and needed to come up with a recipe for the Main Entree category.

I needed to create three different recipes using three of their amazing products. I made a Bloody Mary with salsa (yes, salsa!) for the Brunch category and a bean chili using a Chili Con Queso sauce for the Gameday category. I decided to mash up two of my family’s favorites: stir-fry and the flavors of Jamaica. My 14-year-old son could eat Jerk Chicken or Pork every day if I could keep up. And I could too.

The Peach Mango Salsa had a Jamaican vibe to it and I wanted to go that route. With the balance of sweet and spicy flavors, this dish was incredible! You’ll find the sweetness with the Desert Pepper Peach Mango Salsa. The salsa adds a natural sweetness from the peaches and mangoes, which balances the savory and spicy elements of the dish. The cinnamon also brings in a subtle, warm sweetness that enhances this.

The Spiciness comes from the jalapeño pepper and cayenne peppers. There is a slight level of heat, while the garlic and ginger add a pungent note that balances it out.

How do I make the Sweet and Spicy Pork Stir Fry?

Cook the Rice Noodles: Prepare the rice noodles according to package instructions (typically under 10 minutes). Drain and set aside.

1. Sauté the Vegetables: Heat a large deep skillet, or a wok if you have one, over medium-high heat. Add the olive oil. Add the onion, green bell pepper, and jalapeño pepper, and sauté until softened, about 10 minutes. Add the garlic to the skillet and cook, stirring, for 1 minute, until fragrant.

2. Cook the Pork: Add the ground pork, salt, white pepper, thyme, cayenne, cinnamon, and ground ginger to the skillet. Cook, breaking the pork into small pieces, until no longer pink, about 8–10 minutes.

3. Add the Sauce and Salsa: Pour in the soy sauce, lime juice, and Desert Pepper Peach Mango Salsa. Stir well to combine all ingredients.. Continue cooking and stirring for 5 minutes, allowing the flavors to meld.

4. Combine with Noodles: Add the cooked rice noodles and chopped green onions to the skillet. Stir to coat the noodles evenly with the sauce. Cook for an additional 4 minutes, stirring occasionally.

Serve: Transfer the stir fry to plates and garnish with additional green onions, if desired. Enjoy!

How do I store the Sweet and Spicy Pork Stir Fry?

After a day or so, the noodles will start to become mushy as they absorb all of the moisture. It’s best to eat leftovers as soon as possible.

How do you store it in the fridge?

Let the stir fry cook then transfer into airtight containers. Try and place the leftovers in the refrigerator within 2 hours of cooking to ensure food safety. Stored properly, the dish will keep for up to 3 days.

How do you store in the freezer?

Honestly, this does not freeze well because of the noodles.

How do you Reheat the Sweet and Spicy Pork Stir Fry?

Reheat in a skillet over medium heat for 5–7 minutes, stirring occasionally, until heated through. If reheating the noodles, add a splash of water or soy sauce to prevent sticking and restore moisture.

You can also you the microwave. Place the stir fry in a microwave-safe container and heat in 30-second intervals, stirring between each interval, until hot.

To revive the flavors, add a dash of fresh lime juice or a spoonful of peach mango salsa before serving.

  • 3 tbsp olive oil
  • 1 onion diced
  • 1 green bell pepper diced
