Instructions
Prepare the rice noodles according to package instructions (typically under 10 minutes). Drain and set aside.
Heat a large deep skillet, or a wok if you have one, over medium-high heat. Add the olive oil. Add the onion, green bell pepper, and jalapeño pepper, and sauté until softened, about 10 minutes.
Add the garlic to the skillet and cook, stirring, for 1 minute, until fragrant.
Add the ground pork, salt, white pepper, thyme, cayenne, cinnamon, and ground ginger to the skillet. Cook, breaking the pork into small pieces, until no longer pink, about 8–10 minutes.
Pour in the soy sauce, lime juice, and Desert Pepper Peach Mango Salsa. Stir well to combine all ingredients. Continue cooking and stirring for 5 minutes, allowing the flavors to meld.
Add the cooked rice noodles and chopped green onions to the skillet. Stir to coat the noodles evenly with the sauce. Cook for an additional 4 minutes, stirring occasionally.
