This shortcut green beans and tomatoes recipe is quick, comforting, and full of flavor. Even though it comes together in about 20 minutes, it tastes like something that’s been simmering away all afternoon. It’s made with canned green beans, canned diced tomatoes, onion, a touch of smoke, and finished with a splash of vinegar. The kind of simple side dish that feels right at home next to a bowl of red beans and rice or any easy weeknight dinner.

This recipe came to life during one of my many “future food truck menu planning” days. You know the kind — the ones where the dream is big, the notebook is full of ideas, but the lottery ticket still hasn’t hit. If I ever did make that truck happen, I’d need a few fast, reliable sides that could hold their own, right? Everywhere you look, restaurants seem to have some version of green beans and tomatoes on the menu. It felt like time to figure out my version.

I’ve said this before, and I’ll say it again: I don’t love tasting straight green beans. I need them smothered, loaded down, or cooked with something that makes them not taste like green beans – especially canned green beans. But when they’re done right? I love them. This recipe — along with my Creole Green Beans — checks every box and makes the perfect partner for a creamy pot of red beans and rice.

It also passed the toughest test in our house: the kids. These are a long way from the canned green beans of my childhood. Back then, they were dumped into a bowl, heated, maybe salted, and by the time dinner hit the table, they were lukewarm at best. That bowl lived near my dad and stayed far away from my end of the table.

These green beans are a completely different story. Now they’re requested, anticipated, and happily eaten. And that’s how you know a side dish is worth keeping and worth sharing.

Quick Green Beans and Tomatoes

A fast, pantry-friendly side dish made with canned green beans, tomatoes, onion, garlic, warm spices, and a splash of vinegar. Ready in about 20 minutes and perfect with weeknight dinners or beans and rice.

Ingredients

  • 2 14.5-ounce cans green beans drained
  • 1 14.5-ounce can diced tomatoes undrained
  • 1 small yellow onion finely chopped
  • 4 cloves garlic minced
  • 1 tbsp bacon drippings or olive oil
  • ¼ teaspoon smoked salt
  • ½ tsp kosher salt adjust if using smoked salt
  • ½ tsp Creole Seasoning
  • ¼ tsp black pepper
  • ¼ tsp cayenne pepper
  • ¼ tsp dried thyme
  • 1 tsp apple cider vinegar
  • ½ tsp hot sauce I use the Crystal brand from Louisiana

Optional finish:

  • Small pinch red pepper flakes
  • Fresh chopped parsley

Instructions

  • Heat a medium skillet or saucepan over medium heat. Add the bacon drippings (or olive oil).
  • Add the chopped onion and cook 3–4 minutes until softened and slightly translucent. Add the minced garlic to the pot and stir for 1 minute.
  • Stir in smoked salt, thyme, Creole Seasoning, black pepper, cayenne pepper, and a pinch of salt. Let it bloom for about 30 seconds.
  • Stir in the drained green beans and the tomatoes with their juice.
  • Bring just to a gentle bubble. Reduce heat to low, cover, and simmer 12–15 minutes.
  • Remove from heat and stir in the apple cider vinegar and hot sauce. Taste and adjust seasoning.
  • To serve, sprinkle with parsley or a pinch of red pepper flakes if you like a little extra heat.

How Do You Make Quick Green Beans and Tomatoes?

1. Heat a medium skillet or saucepan over medium heat and add the bacon drippings or olive oil.

2. Add the chopped onion and cook 3–4 minutes until softened and slightly translucent. Add the minced garlic and cook for about 60 seconds.

3. Stir in smoked salt, thyme, Creole seasoning, black pepper, cayenne pepper, and a pinch of salt. Let the spices bloom for about 30 seconds.

4. Stir in the drained green beans and the diced tomatoes with their juice.

5. Bring to a gentle bubble, reduce heat to low, cover, and simmer for 12–15 minutes.

6. Remove from heat and stir in apple cider vinegar and hot sauce. Taste and adjust seasoning.

7. Finish with chopped parsley or red pepper flakes if you’d like a little extra heat.


Tips for Extra Flavor

  • Add cooked chopped bacon for a smoky version
  • Stir in sliced smoked sausage to make it heartier
  • Let the beans simmer longer for a deeper flavor
  • Add crushed red pepper if you like more heat

Warm gently on the stovetop or microwave until heated through.

You can freeze this dish for up to 2 months. Thaw overnight and reheat gently.
