My wife loves Pad Thai so I was leaning towards that. I decided to mash up two of my family’s favorites: stir-fry and the flavors of Jamaica. My 14-year-old son could eat Jerk Chicken or Pork every day if I could keep up. And I could too.
The Peach Mango Salsa had a Jamaican vibe to it and I wanted to go that route. With the balance of sweet and spicy flavors, this dish was incredible! 1. Sauté the Vegetables: Heat a large deep skillet, or a wok if you have one, over medium-high heat. Add the olive oil. Add the onion, green bell pepper, and jalapeño pepper, and sauté until softened, about 10 minutes. Add the garlic to the skillet and cook, stirring, for 1 minute, until fragrant.
2. Cook the Pork: Add the ground pork, salt, white pepper, thyme, cayenne, cinnamon, and ground ginger to the skillet. Cook, breaking the pork into small pieces, until no longer pink, about 8–10 minutes.
3. Add the Sauce and Salsa: Pour in the soy sauce, lime juice, and Desert Pepper Peach Mango Salsa. Stir well to combine all ingredients.. Continue cooking and stirring for 5 minutes, allowing the flavors to meld.
4. Combine with Noodles: Add the cooked rice noodles and chopped green onions to the skillet. Stir to coat the noodles evenly with the sauce. Cook for an additional 4 minutes, stirring occasionally.
Serve: Transfer the stir fry to plates and garnish with additional green onions, if desired. Enjoy!

Reheat in a skillet over medium heat for 5–7 minutes, stirring occasionally, until heated through. If reheating the noodles, add a splash of water or soy sauce to prevent sticking and restore moisture.
You can also you the microwave. Place the stir fry in a microwave-safe container and heat in 30-second intervals, stirring between each interval, until hot.
To revive the flavors, add a dash of fresh lime juice or a spoonful of peach mango salsa before serving.
