As a kid, and even when my wife and I were still learning to cook, if we wanted a side of carrots, it was as simple as cracking open a can and popping it into the microwave. That’s what I remember when I was younger: mushy crinkle-cut carrots seasoned with salt and pepper sitting in the middle of the table. Not inviting at all but that was our way of eating carrots.
It wasn’t until I started to experiment around the kitchen that I began to love making carrots: fresh carrots; and finding other ways of cooking them. I started to season them with Cajun Seasoning and they turned out amazing.
Making Cajun Seasoned Roasted Carrots is simple. It’s perfect for a quick weeknight side dish, in fact. You’ll find that this flavorful dish consisting of carrots roasted in the oven with a fat (olive oil) and seasonings will help enhance the flavor. While the recipe only has a few ingredients, the outcome and taste are outstanding.
Ingredients
- carrots
- olive oil
- Cajun seasoning
- whole garlic cloves
- salt
- black pepper
- lemon juice
How Do You Make Cajun Seasoned Roasted Carrots?
To prepare the carrots: trim the stem but leave about 1” worth for appearance purposes if the carrots still have it.
Peel the carrots.
Place the carrots and whole garlic cloves on a parchment-lined cookie sheet and drizzle the olive oil.
Season with Cajun Seasoning, salt, and black pepper, and toss until all of the carrots are coated in the olive oil and seasoning.
Arrange the seasoned carrots in a single layer on the cookie sheet.
Place the carrots in a preheated oven and roast for 10 minutes. Carefully remove the cookie sheet from the oven and rotate the carrots. Place back in the oven for another 10 minutes. Repeat the step again: remove from the oven, rotate the carrots, then return to the oven for an additional 10 minutes.
Remove the carrots from the oven. At this point, they should be browned and tender. To check the tenderness of all of the pieces, with a fork, pierce the thickest parts of a carrot. The fork should easily slide in. If they are not completely done by this point, place them back in the oven for an additional 5 minutes. Once the carrots are tender, drizzle with lemon juice.
Serve warm with your favorite entree.
Make-ahead and Storage
Make-ahead: These are best eaten right after making but they will last about 3-4 days in the fridge.
How to Store: Cover and store these in an air-tight container for up to 4 days in the refrigerator. If sealed tightly, they can be stored frozen for up to 3 months but it’s not recommended. They will come out mushy once reheated.
How to Reheat: For the best results, reheat in the oven at 350F for about 5 minutes.
